The king of ricottas this cheese has a subtle fresh flavour that is light yet satisfying. It can be enjoyed as an eating cheese with honey and fruit or with antipasto. In the kitchen it works well with pasta, salads and baking. Ricotta cheeses can be baked whole and served with pestos, herbs and olive oil.
Clevedon Buffalo ricotta is a first ricotta. It is recovered by hand from the first split of the whey which gives a superior smooth and creamy consistency.
