ROAST KUMARA WITH SMASHED AVOCADO & OAXACA


  • 2 medium kumara, cut in half length wise

  • Olive oil

  • Salt and freshly ground black pepper

  • 1 tablespoo nmaple syrup 

  • Juice of 1 lime

  • 1 teaspoon smoked paprika

  • 1 avocado, roughly mashed and seasoned

  • ½ ball Clevedon Buffalo Co. Oaxaca cheese, pulled apart into strings

  • ½ teaspoonchilli flakes

  • Fresh coriander leaves, to serve


Preheat oven to 200°C. Rub kumara halves all over with olive oil and season with salt and pepper. Score the kumara flesh with a knife. Place kumara in an oven pan, skin-side down, and roast for 20 minutes. 

Remove from the oven and brush tops with maple syrup. Return to the oven and roast for 15-20 minutes more or until tender and golden brown. Squeeze lime juice over the top and sprinkle with smoked paprika. Top with a dollop of smashed avocado and a pile of Oaxaca cheese. Serve garnished with chilli flakes and coriander leaves.
