Our ricotta has a subtle fresh flavour that is light yet satisfying. It can be enjoyed with honey and fruit or with antipasto. It works well with pasta, salads and baking - it can be baked whole and served with pesto, herbs and olive oil. It is recovered by hand from the first split of the whey which gives a superior smooth and creamy consistency.
